Kale Slaw

kale_slawTry this delicious recipe for a healthy meal that has maximum payoff.

Serves 4

Ingredients:

  • 4 cups kale, shredded
  • 1/2 cup shredded rainbow carrots
  • 1/4 cup dried cranberries, no sugar added
  • 1/4 cup blueberries
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey

Directions:

In a large bowl, mix together kale, carrots, cranberries and blueberries. In a separate bowl, whisk together olive oil, apple cider vinegar, and honey.

Pour dressing over kale slaw and toss with tongs to coat. Refrigerate for 15 minutes before serving.
